2 Tbs. of lemon juice (to prevent avocados from browning)
1 can flaked tuna, drained
1 1/2 Tbs. of mayonnaise
2 Tbs. of red onions, finely diced
1/4 tsp. of paprika
1 tsp. Sriracha sauce
3/4 cup of cheddar cheese
salt and pepper, to taste
chives, for serving (optional)
Cut avocados in half and remove the pits. Using a small spoon, scoop out a bit of the avocado to make a bigger bowl for the tuna mixture.
Keep the avocado that was scooped out and drizzle lemon juice on it.
In a bowl, mix together tuna, scooped avocado, mayonnaise, red onion, paprika, Sriracha sauce, salt and pepper.
Scoop the salad into the avocados, dividing evenly. Sprinkle cheese on top of each avocado and place them on a baking rack.
Set your oven on broil (HI) and broil avocados (2-3 min max) until cheese is melty.
Remove from oven and sprinkle with chives and serve.
