Broiled Pinapple and Creamy Blue Cheese Crostini


1 loaf baguette-style French bread thinly sliced
1 cup of fresh pineapple, finely chopped
1 eight-ounce soft blue cheese, at room temperature
1/4 cup of blood orange olive oil (you may use regular olive oil with a few drops of orange juice & orange zest to give it a citrus flavor)
Black sea salt (or regular sea salt)



Preheat oven to 400°F. Brush orange olive oil on each baguette slice. Place baguette slices in single layer on baking sheet.
Toast in oven for about 5 minutes.
Take the baking sheet out of the oven, spread the blue cheese and top with a few pieces of pineapple.
Set your oven to Broil.
Place the baking sheet back in the oven for a few minutes until the pineapple is tender and caramelized and the cheese starts to melt a little.
