Time: 15-20 minutes
3/4 cups prepared Caesar dressing (I use) (you may make your own if you have more time)
1 tsp. of grated lemon zest
2 Tbsp. of lemon juice
6 cups shredded Brussels sprouts (chopped by knife or use a food processor)
1/4 cup finely grated Parmesan cheese
1 teaspoon pepper
A pinch of salt
1 cup croutons (I used Grissol)
2 Tbsp. of unsalted butter
Prosciutto sliced into bite-size pieces
Directions for Salad:
In a large bowl, stir together Caesar dressing, lemon zest, and lemon juice.
Add brussels sprouts, Parmesan, salt, and pepper; toss to mix.
Top with croutons, prosciutto, and more Parmesan, if desired.
Directions for Croutons:
In a medium pan, add butter and make it melt.
Add croutons, season with salt, mix.
Toast them until they get golden and have absorbed all that butter.
*Stay close as they can burn fast!
