Butter Bean and Caper Crostini


1 can butter beans (15oz) or canellini beans, rinsed and drain
2 Tbs of red onions, minced
1 Tbs. of capers, rinsed
2 Tbs of olive oil
1 Tbs. chopped parsley
1 Tbs. of apple cider vinegar
Salt and pepper
1 French baguette, sliced

In a medium bowl, mix all of the ingredients and mash the beans slightly. Top bread slices with bean mixture.
