2 cans (16oz each) of chickpeas, drained and rinsed (divided)
1 cup plain Greek yogurt
2 Tbsp. of freshly squeezed lemon juice
1 Tbsp. of olive oil
1/4 tsp. of garlic powder
1/2 tsp. of salt
1/2 tsp. of black pepper
1 cup finely chopped celery
1 cup finely chopped red bell pepper
1/4 cup minced fresh dill
In a large bowl, mix chickpeas, red pepper and celery with Greek yogurt, lime juice, olive oil, garlic powder, salt and pepper until mostly smooth and combined.
Garnish with lime zest and extra dill.
