10 ounces red cherry tomatoes
2 garlic cloves, thickly sliced
5 Tbs. of olive oil, plus more for drizzling
1 French baguette sliced and toasted
1 300-g log fresh marinated goat cheese, at room temperature

Preheat the oven to 325. In a bowl, toss the tomatoes with the garlic and 1 tablespoon of the olive oil; season with salt and pepper. Transfer the tomatoes on a baking sheet covered in aluminium paper. Roast the tomatoes for 25-30 minutes, until bursting and lightly caramelized. Transfer the tomatoes to a bowl.
Spread the goat cheese on the toasts and top with the tomatoes and pieces of garlic. Drizzle with olive oil, sprinkle with sea salt and pepper. Serve immediately.
