You may even to use it for sandwiches, gyros or mini pizzas.
1 cup very warm water
2-2 1/2 cups unbleached all-purpose flour
1 tsp. instant yeast (can easily be found at your grocery store)
1 Tbsp. of olive oil
1 tsp. of salt
In a bowl mix together the water, 2 cups of flour, yeast, olive oil, and salt.
(Sprinkle in more flour if the dough is too sticky.)
Knead the dough by hand 8-10 min on a floured surface.
Place the dough in an oiled bowl and cover tightly with plastic wrap. Let the dough rise until doubled, about one hour.
Divide the dough into 6-8 pieces (mine made 7).
Roll out the pieces of dough into 6-8 inch circles, as evenly as possible.
Dry fry them on a hot skillet for 2-3 minutes per side, or until they are puffed a bit with some browned spots.
Make the cooked flatbread cool off on a wire rack.
