Inferno Sambal Shrimp on Jasmine Rice Bed


1 pound of pre-cooked shrimp
1 medium onion, finely chopped
1/4 cup of fresh parsley, chopped
2 garlic cloves, minced
2 Tbs. olive oil
1 Tbs. of Sambal sauce (you may use another type of hot sauce)
1 tsp. dried hot red pepper flakes
2 Tbs. fresh lime juice
1 cup of cooked Jasmine Rice (or other white rice)
1/2 cup of spicy mayo (1/2 cup mayonnaise+1 Tbs.Sriracha/ or other hot sauce)
Salt and pepper


Heat a large pan over medium heat. Add olive oil to pan and cook onions until softened. Add garlic, pepper flakes, garlic and cook a few minutes.
Make sure not to burn the garlic!
Add shrimp, sambal sauce, salt, pepper, lime juice and and parsley to pan. Stir all ingredients together.
Since the shrimp are already cooked, simply sauté the shrimp until the surfaces start turning golden brown. Do not over cook them, they will be hard and rubbery!
Form little patties with the rice (we want this to be an appetizer).
Add a little bit of spicy mayo on the rice and top with a few shrimps. If you have little serving spoons, you may spread the spicy mayo underneath the rice.
Serve hot or at room temperature.
