But who is this mysterious Maria you ask?
She’s my aunt and she is truly a delightful cook! She can make pretty much anything! I just love this dish. It’s really nothing fancy or complicated (you know me, I like to keep it simple). She usually makes it in the summer to accompany barbecue food! Whenever I go over, I secretly pray for her famous potatoes (but she doesn’t know it 😉). I just loooove how they’re just a little warm and super creamy and how the thin onion slices gives it a little kick and crunch. Yup! Think it’s time to invite myself over…!
5-6 potatoes, peeled and cubed
1 small red onion, thinly sliced
Olive oil, for drizzle
Salt and Pepper, to taste
In a large pot, bring water to a boil (make sure to salt the water) and add potatoes.
Cook until tender and drain.
In a large serving bowl, add cooked potatoes and onion slices.
Drizzle olive oil and season with salt and pepper.
Toss all ingredients until fully combined.
