500g of Fusilli or other pasta shapes
1 cup fresh cilantro leaves, chopped (plus a few extra leaves for garnish)
¼ cup red onion, minced
1 tsp. of Dijon mustard
½ cup mayonnaise
¼ cup plain Greek yogurt
2 Tbs. of lemon juice
2 cups bite-sized cooked salmon pieces (medium salmon filet baked in oven 350, 20 minutes)
Bring a large pot of water to a boil, and salt the water generously. Cook the pasta according to package directions, drain, and rinse with cool water.
In a large bowl, combine the pasta, cilantro sauce, lemon juice and salmon pieces. Toss gently to combine well. Garnish with cilantro leaves. Add seasoning if needed.
Serve at room temperature.
