This dish is so delicious, flavourful and light you could have it as a snack.
You could even serve it as a side dish with a beautiful pieced of fish or even with a nice juicy steak!
1 pound of fresh asparagus, trimmed
1 (8-ounce) package mushrooms, quartered
1/4 cup red onion, sliced
3 large cloves fresh garlic, sliced
1/4 cup of salted butter, melted (you may replace with olive oil)
1 tsp. of fresh lemon juice
Salt and black pepper
Heat your oven to 425°F.
Arrange asparagus, mushrooms, onions and garlic slices on a baking pan lined with parchment paper.
Season lightly with salt and pepper.
Drizzle with melted butter and lemon juice.
Bake 15-20 minutes until asparagus are tender and lightly browned.
