12 large romaine lettuce leaves
1 pound ground beef
1 yellow onion, chopped
3 Tbs. of taco seasoning
1 red onion, chopped, for topping
1/2 cup of chopped pineapple for topping (optional)
Fresh cilantro for topping
Sour cream for topping
Salt and Pepper
In a large pan, cook yellow onion over medium heat with olive oil until onion is translucent, about 5 minutes.
Add ground beef, taco seasoning, salt and pepper. Cook until beef is browned and crumbly, 5 to 8 minutes. Drain excess grease.
Fill each lettuce leaf with about 2 tablespoons beef filling; top with 1 to 2 teaspoons of cilantro, pineapple, sour cream, and a few drops of lime juice.
