Rose Petal and Pistachio Stuffed Apricots

Soooo much softness coming from this appetizer! Just so pretty! And the aromas of fruit and flower…perfect for the summer!

*Makes 16

Ingredients:

8 fresh, ripe apricots, washed, halved, pits removed
4oz of soft goat cheese (1 small log)
1/4 cup roasted salted pistachios, shelled and chopped
2 Tbsp. of edible rose petals (found mine at Whole Foods)
Sea salt
Honey, for drizzle

 

Directions:

Arrange the apricot halves cut-side up on a large tray.

In the center of each apricot, place about a teaspoon of goat cheese. Sprinkle with the chopped pistachios and rose petals. Dust with a pinch of salt and drizzle with honey.
