This salad is absolute heaven! So simple but packed with flavour and freshness! Just perfect for a hot summer day!
You may also try orange and fennel!
1 small white onion, finely sliced
1 Tbsp. of fresh parsley, finely chopped
90 ml of extra-virgin olive oil
Salt and pepper, to taste
Peel the oranges and with a sharp knife, remove the white membrane all around each orange (this will remove the bitterness).
Slice them into thin rounds and arrange the slices on a platter.
Slice the onion as finely as you can, and scatter over the oranges.
Season with salt and pepper and drizzle generously with olive oil. Garnish with chopped parsley.
