2 ripped nectarines, finely diced
1 red bell pepper, finely diced
1 yellow bell pepper, finely diced
1 handful of fresh cilantro, chopped
4 Tbsp. of olive oil
Juice from 2 small limes
1 tsp. Dijon mustard
2 ripped avocados, peeled and pit removed
1 French baguette, sliced
Salt and pepper, to taste
Preheat oven to 400ºF. Put baguette rounds directly on oven rack and bake until toasted, but not browned, 2 to 3 minutes. Set aside.
Cut the avocados in half and scoop out the flesh into a bowl (discard the pit). Add half the lime juice, the pepper sauce and some salt. Using the back of a spoon, roughly smash the avocado, until spreadable.
In a medium bowl, mix olive oil, nectarines, bell pepper, cilantro, Dijon mustard, salt, pepper and remaining of lime juice.
Adjust seasoning to your liking.
Spread 1 to 2 teaspoons avocado mixture on each bread slice and top with nectarine mixture.
