Strawberry Basil and Avocado Mousse Crostini


1 loaf baguette-style French bread thinly sliced
Sliced strawberries
Drizzle of balsamic vinegar
2 ripe avocados
Fresh basil
Lemon juice
Olive oil
Salt and ground black pepper



Preheat oven to 400°F. Brush olive oil on each baguette slice. Place baguette slices in single layer on baking sheet. Toast in oven for about 5 minutes.
Meanwhile, place the strawberries in a small bowl and toss with a small drizzle of balsamic vinegar. Let sit for 5 minutes.
Halve and pit avocados and scoop flesh into a food processor. Add lemon juice, and a pinch salt and pepper and puree until completely smooth. Spread each baguette slice with avocado mousse and top with a few strawberry slices.
