Warm Zesty Tuna Pasta Salad

 

    Ingredients:
    300g of Farfalle or other pasta shapes
    1 medium yellow onion, finely chopped
    2 cloves of garlic, finely chopped
    4 Tbs. of olive oil (and a little more to drizzle at the end)
    2 Tbs. of tomato paste
    2 Tbs. of capers
    1 can of tuna in water, drained
    1/2 cup of fresh flat-leaf parsley
    1/4 cup of fresh dill (reserve a little for topping)
    Zest from 1 lemon
    Salt and Pepper

 

    Directions:
    In a large sauté pan over medium heat add olive oil, onions, garlic, tomato paste, salt and pepper, and sauté until onions are translucid.
    Meanwhile, cook the pasta in a large pot of boiling water according o the package instructions until tender.
    Add tuna, capers and lemon zest to the pan and toss with onions.
    Once the pasta is cooked, strain in a colander, add the pasta to the pan with onions. Add the parsley and dill to the pasta and mix gently all ingredients. Add seasoning if needed and drizzle a little bit of olive oil on top.
    Top with fresh dill.
    The pasta can be served right away if you prefer it warm, or can be made in advance and the flavours allowed to develop, they will improve over time.
