Zesty Roasted Red Pepper Salad


4 red peppers, roasted, skin peeled and sliced (if in a hurry, you may use store-bought roasted peppers in a jar)
5-6 Tbsp. of olive oil
Zest and juice from one lemon
1 tsp. of Dijon mustard
Salt and pepper, to taste



In a large bowl, combine all ingredients. Cover and serve cold.
